Summer Spinach Salad

Serves:  4-5
A handful of fresh torn spinach or baby spinach (one handful per person) 
1½ to 2 cups cleaned and sliced strawberries 
1 apple, cut into cubes 
½ cup of roughly crushed, lightly toasted pecan nuts 
60g feta cheese, crumbled (optional) 

Dressing: 

¼ cup FILIPPO BERIO olive oil 
2 tablespoons balsamic vinegar/apple cider vinegar 
4 teaspoons granulated sugar 
½ teaspoon salt and pepper 
½ teaspoon ground rosemary 
A teaspoon each of finely chopped onion and garlic
Toss the spinach, the cubed apple, the sliced strawberries, the pecans, and the feta cheese together in a glass bowl. Combine dressing ingredients in a jar; shake well until blended. Drizzle dressing over the salad and toss lightly. Chill in the fridge for a few minutes before serving.
This salad can be served with a pasta or fish dish to complement the sweetness of the salad.
