Salmon - Anna Accolla

Serves:  2
+- 250 g Norwegian Salmon
pesto (make your own) or Filippo Berio pesto
few sunflower seeds
0ne med. size thinly sliced brinjal
the mixture: Filippo Berio Extra virgin olive oil
grated garlic
squeezed half  fresh lemon
salt and pepper
1 medium pear with skin cut in half and thinly sliced and seeds
pan fry the brinjals in lightly greased pan (Filippo Berio extra virgin olive oil) and set aside

wash salmon and toss in the 'mixture' and then place on a baking sheet covered with foil.  Place slices of pear on the salmon drizzle again with Filippo Berio Extra Virgin olive oil and bake for about 8 - 10 mins
Place the slices of brinjal on your serving plate and top with the baked salmon and pear slices  squeeze a little more lemon , drizzle of Filippo Berio extra virgin olive oil and decorate with cocktail tomatoes , rocket  and lastly the pesto on the salmon
