Popeye Pesto! - Beulah Harris

Easy Pesto with Sweet baby spinach. You don't even need a blender...

Serves:  4
5 tablespoons very finely chopped sweet baby spinach
1 tablespoon finely chopped salted peanuts
6 chopped pepperdews
2 tablespoons chopped pickled Jalepeno peppers, pips and all
Half teaspoon crushed garlic 
+- 50 ml olive oil
  1. Chop the spinach leaves as finely as you can as finely as you can.
  2. Place all ingredients in mixing bowl.
  3. Stir and mash a bit, then beat with electric mixer for a few minutes.
  4. Mash for a bit again, check consistency of olive oil, then beat again for another minute.
(I used a electric mixer as my blender is not working, but I found this worked well enough especially as it has a slightly rough texture).
