Recipe Reveal Number 3: Norwegian Salmon

Anna Accolla has gone beyond the norm by pairing some unusual but striking flavours: basil pesto, sunflower seeds and salmon – a conglomeration of unique flavours, with extraordinary results.

With 226 votes overall, Anna has managed to get herself to the Top Ten – her recipe shows both passion for Italian cuisine, and a daring incline to challenge traditional tastes. Is this the one?

Chef Graham Isaacson rolls up his sleeves.


While he puts thinly sliced brinjals to fry in a lightly greased pan (with FILIPPO BERIO Olive Oil of course), Graham carefully slides a knife across the fish to select the freshest, leanest piece of salmon.

As per Anna’s instructions, Graham stirs together some sunflower seeds and FILIPPO BERIO Basil Pesto. The mixure looks great, ready to coat on the salmon before roasting.

And finally, time for the tasting! “I love the simplicity of the presentation,” says Graham before he digs in. “So easy to make, yet the dish is so stylish”.

His for splits the silky fish and he takes a bite.

“Wonderful!” Graham nods as he comments on the texture; it seems to have cooked for just long enough. “The pesto flavour stands out quite a bit. The texture of the sunflower seeds is unusual when compared to the softness of the fish. A daring combination! But very special.”
